2 ripe but firm avocados, halved and pitted, skin left on
1/2 cup Fiesta Dip
1/4 cup cotija cheese, crumbled (or sharp cheddar or extra sharp cheddar cheese)
Preheat broiler to high.
Place avocado halves on a baking sheet, open side up. Fill pit hole of avocado with dip. Divide cheese evenly among avocado halves. Broil 3-4 inches from heat source until cheese bubbles and begins to brown, approx. 3-5 minutes.
Serve warm with lime wedges.
Chef’s Note: For a chunky guacamole style dip, scoop baked avocado/dip/cheese mixture into a bowl. Using a knife, chop mixture into large chunks and mix to incorporate avocado chunks with dip and cheese. Serve warm with tortilla chips.
