Golden Parmesan Potato Bites

1 pound small red potatoes (about 12 potatoes)
Olive oil
1/4 cup Spinach & Kale Dip made with Greek Yogurt*
2 tablespoons Parmesan cheese, finely grated
1 tablespoon chives, minced (optional)

*Feel free to substitute with any of our Classic Dips & Spreads or our Greek Yogurt Dips & Spreads .

Put potatoes in medium pot and cover with cold water by 1-inch. Bring to boil, cook until potatoes are tender enough that a pairing knife slides easily into center, about 12 to 15 minutes (time varies depending on size of potatoes).

Drain, cool enough to handle.

Preheat broiler.

Drizzle 1 to 2 teaspoons olive oil over potatoes, coat with your hands. Cut each in half, then cut a thin sliver off each bottom half so they sit upright without wobbling.

Spoon 1 teaspoon of dip onto each potato. Sprinkle about 1/4 teaspoon Parmesan over top.

Transfer potatoes to baking sheet, broil until golden brown. Sprinkle a pinch of chives on top and serve.
