Pizza Burger Skillet Pasta

12 oz. ground beef
3 oz. sliced pepperoni, cut in half into half-moons (about 1 cup) (optional)
4 cloves garlic, minced
3 cups water
1-1/2 teaspoons salt, plus more to taste
1 teaspoon pepper, plus more to taste
8 oz. rotelli, rotini or fusilli pasta
1, 14.5-oz. can chopped tomatoes
2 Tablespoons tomato paste
1 cup Italian Style Tomato & Cheese Dip
1 cup mozzarella cheese, shredded
2 Tablespoons fresh basil, thinly sliced, divided
1/4 cup Parmesan cheese, shredded

Cook ground beef in large ovenproof skillet over medium heat, breaking it up and stirring occasionally, until halfway cooked, about 3 minutes. Add garlic and pepperoni (if using), continue to cook, stirring occasionally, until beef is no longer pink, about 3 minutes. Stir in water, salt and pepper. Stir in pasta, nestling it into the liquid, and bring to a boil.

Reduce to a simmer, cover and cook until pasta is done, 10 to 12 minutes.

Meanwhile, preheat broiler and arrange a rack about 6-inches from heating element.

Combine tomatoes (with their juices), and tomato paste in a medium bowl. Stir tomato mixture, dip, mozzarella cheese and 1 Tablespoon basil into beef and pasta mixture. Add more salt and pepper to taste. Sprinkle Parmesan cheese on top, transfer to broiler and cook until browned, about 3 minutes.

Sprinkle with remaining 1 Tablespoon of basil and serve.

Chef’s Notes: Broiling the top of the pasta mixture helps brown the cheese and make the dish a little more pizza-like. But it’s entirely optional—if you’re pressed for time, skip it.

This recipe is also good with Italian sausage—substitute it (removed from any casings) for some or all of the ground beef.
