Salmon Caesar Wraps

Yield: 6 wraps

9 cups chopped romaine lettuce (about 1 large head)
1/4 cup carrot, shredded
1/4 small red onion, thinly sliced
1/4 cup Caesar dressing, purchased or homemade
6, 9- or 10-inch flour tortillas
1-1/2 cups Wild Smoked Salmon Dip, or Smoked Sockeye Salmon Spread, plus more for serving
3/4 cup Parmesan cheese, shredded

Toss lettuce, carrot, onion and dressing. Set aside.

Spread a tortilla with 1/4 cup dip. Arrange 1/6 of lettuce mixture in a line across the tortilla, stopping about 2-inches short of one edge. Top with 2 tablespoons of cheese. Fold one side of tortilla up and over filling, tucking filling in tightly, fold in the 2-inch edge. Continue rolling tortilla towards the other side, securing with a toothpick if necessary.

Repeat with remaining tortillas. Serve additional dip on the side.
