An elevated take on a classic! Cheesy, caramelized onion mashed potatoes top savory herbed meatloaf for a delicious all-in-one meal.

Ingredients

  • 2 pounds 80-90% Ground Beef
  • ½ cup Panko Breadcrumbs
  • 1 10-oz. container La Terra Fina Caramelized Onion with Roasted Garlic Dip & Spread, divided
  • 2 large Eggs
  • 2 tbsp. Fresh Parsley, finely chopped
  • 2 tbsp. Worcestershire Sauce
  • 1 tsp. Salt
  • ½ tsp. Black Pepper
  • 1 ½ pounds Yukon Potatoes, peeled and chopped
  • 3 tbsp. Butter
  • ¼ cup Grated Cheddar Cheese, shredded

Instructions

  1. Preheat oven to 375F. Line a baking sheet or 9×5” loaf pan with parchment paper. Lightly spray with non-stick spray. Set aside.
  2. In a large bowl, mix the beef, breadcrumbs, ½ cup La Terra Fina Caramelized Onion with Roasted Garlic Dip & Spread, eggs, parsley, Worcestershire sauce, salt, and black pepper together just until combined. Be careful not to overmix.
  3. Press into the loaf pan or form the mix into a loaf-like shape on the prepared pan.
  4. Bake for 25 minutes, or until almost cooked through.
  5. In the meantime, make the mashed potatoes.
  6. To make the potatoes, cook the potatoes in a saucepan of boiling salted water for 15 minutes, until fork tender. Drain the potatoes well.
  7. Combine the potatoes with the butter and remaining La Terra Fina Caramelized Onion with Roasted Garlic Dip & Spread in a large bowl. Mash until desired texture, then stir in the shredded cheese. Season with salt and black pepper to taste.
  8. Spoon the mashed potatoes on top of the meatloaf and bake another 20-25 minutes, until potatoes are lightly golden brown on top. The meat thermometer should reach 160F.
  9. Let rest 10 minutes before cutting into slices. Enjoy!
