Preheat the oven to 425 degrees and grease a casserole dish
Place the potatoes on a baking sheet and drizzle on the olive oil. Place in the oven and bake for 40-45 minutes, until the potatoes start to get golden and crisp.
While the potatoes are in the oven, prepare the bacon. Place the bacon in a skillet over medium-high heat. Cook for 4-5 minutes on each side, until crispy. Transfer the cooked bacon to a plate lined with a piece of paper towel to cool. Once it is completely cooled, use a knife to chop it into small bits.
Sprinkle the cheddar cheese over the potatoes in the casserole dish, then place them back in the oven. Bake for 10-15 minutes, until the cheese is completely melted.
When the potatoes are finished cooking, sprinkle the bacon bits and green onions on top.
