Caramelized Onion Loaded Potato Casserole

Ingredients
- 1 tablespoon olive oil
- 2 pounds Russet potatoes, peeled and diced into ½’’ thick pieces
- 4 slices bacon
- 1 10-oz. container La Terra Fina Caramelized Onion with Roasted Garlic Dip & Spread
- 1 ½ cups shredded cheddar cheese
- 2 green onions, sliced
Instructions
- Preheat the oven to 425 degrees and grease a casserole dish
- Place the potatoes on a baking sheet and drizzle on the olive oil. Place in the oven and bake for 40-45 minutes, until the potatoes start to get golden and crisp.
- While the potatoes are in the oven, prepare the bacon. Place the bacon in a skillet over medium-high heat. Cook for 4-5 minutes on each side, until crispy. Transfer the cooked bacon to a plate lined with a piece of paper towel to cool. Once it is completely cooled, use a knife to chop it into small bits.
- Once you take the potatoes out of the oven, transfer them to a casserole dish. Toss them with the La Terra Fina Caramelized Onion with Roasted Garlic Dip & Spread.
- Sprinkle the cheddar cheese over the potatoes in the casserole dish, then place them back in the oven. Bake for 10-15 minutes, until the cheese is completely melted.
- When the potatoes are finished cooking, sprinkle the bacon bits and green onions on top.
