Caramelized Onion Pasta Salad with Shrimp

Ingredients
- La Terra Fina Caramelized Onion with Roasted Garlic Dip & Spread, 10 oz
- 1 lb Fusilli or pasta of choice
- 1 1/2 cup Green, red + yellow bell peppers, chopped
- 16 Cherry tomatoes, halved
- 16-20 Shrimp, peeled and deveined
- Fresh lemon juice
Topping:
- Crispy Onions
- Parmesan
- Parsley
- Chili flakes
Instructions
- Cook pasta according to package instructions. Drain. Add to a mixing bowl. Add in cherry tomatoes, bell peppers, and 8 ounces Caramelized Onion with Roasted Garlic Dip & Spread. Mix it all together.
- Add shrimp to a pot of boiling water. Boil for 3-5 minutes, until pink. Strain. Take out and add a little lemon juice to the shrimp with a pinch of salt.
- To serve, place the pasta salad in a bowl and top with the shrimp. Dollop remaining Dip on top, and garnish with crispy onions, Parmesan, chili flakes and fresh parsley.
