- 2 large Eggs
- 2 tbsp. Fresh Parsley, finely chopped
- 2 tbsp. Worcestershire Sauce
- 1 tsp. Salt
- ½ tsp. Black Pepper
- 1 ½ pounds Yukon Potatoes, peeled and chopped
- 3 tbsp. Butter
- ¼ cup Grated Cheddar Cheese, shredded
Instructions
- Preheat oven to 375F. Line a baking sheet or 9×5” loaf pan with parchment paper. Lightly spray with non-stick spray. Set aside.
- In a large bowl, mix the beef, breadcrumbs, ½ cup La Terra Fina Caramelized Onion with Roasted Garlic Dip & Spread, eggs, parsley, Worcestershire sauce, salt, and black pepper together just until combined. Be careful not to overmix.
- Press into the loaf pan or form the mix into a loaf-like shape on the prepared pan.
- Bake for 25 minutes, or until almost cooked through.
- In the meantime, make the mashed potatoes.
- To make the potatoes, cook the potatoes in a saucepan of boiling salted water for 15 minutes, until fork tender. Drain the potatoes well.
- Combine the potatoes with the butter and remaining La Terra Fina Caramelized Onion with Roasted Garlic Dip & Spread in a large bowl. Mash until desired texture, then stir in the shredded cheese. Season with salt and black pepper to taste.
- Spoon the mashed potatoes on top of the meatloaf and bake another 20-25 minutes, until potatoes are lightly golden brown on top. The meat thermometer should reach 160F.
- Let rest 10 minutes before cutting into slices. Enjoy!
