½ c of diced red or orange bell pepper (mini peppers work well)
Pinch of salt
½ tsp of black pepper
¼ tsp of cayenne pepper for extra kick (optional)
½ c of bacon bits, Hickory-Smoked if desired for a smokey flavor
1 ziplock or sturdy, clean plastic bag
Instructions
Hard-boiled egg directions: Carefully add 12 whole eggs, shell on, to a large saucepan. Cover eggs plus an inch with room-temperature water. Turn heat to medium-high. When water comes to a boil, boil eggs gently for 10 minutes. Remove eggs with a large spoon or small strainer and plunge them into cold ice water. When cooled, peel the shell from the eggs.
With a sharp knife, slice hard-boiled eggs in half longways. Put cooked egg yolks in a medium mixing bowl. Reserve 1/3 cup of dip and spoon into the corner of a ziplock bag. Add the remaining Jalapeño Ranch Dip to the bowl with egg yolks. Mash together with a fork until creamy and most of the lumps are broken up. Add diced red peppers, minced cilantro, a pinch of salt, black pepper to taste, and cayenne pepper, if using, and stir until fully incorporated.
Scoop approximately one teaspoon of Jalapeño Ranch egg mixture on top of the entire half of the egg, creating a football-shaped mound. Gently dip the top into a bowl of the bacon bits to cover. Cut a tiny corner off the ziplock bag with the Jalapeño Ranch dip. Squeeze the dip onto the egg in one line longways and three short lines crossing the longer line to look like football stitching. Repeat with the other eggs.
