Southwest Steak Roll Ups

Ingredients
- 1 ½ pounds thin-sliced sirloin or flank steak
- 2 tbsp Worcestershire Sauce
- 1/4 tsp ground black pepper
- 1/2 tsp sea salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp butter
- 1- 10-oz container La Terra Fina Southwest Fiesta with Black Beans and Corn Dip and Spread, divided
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1 tbsp olive oil
- toothpicks
Garnish options: – top with fresh lime and cilantro and/or additional sauce.
Instructions
- Cut beef into 3 inch strips, pound with a mallet to 1/4-inch thickness, if needed.
- Add the strips to a bowl and sprinkle with salt, pepper garlic powder and onion powder and Worcestershire sauce . Set aside for 20 minutes to marinate.
- While steak is marinating, slice peppers into thin strips longer than the steak pieces.
- Heat 1 tablespoon of butter in a large skillet over medium-high heat and add in bell pepper strips. Cook stirring frequently until just crisp-tender, about 3-4 minutes. Season with salt and pepper, to taste. Set aside.
- If grilling, pre-heat grill.
- To assemble the roll-ups, place the steak strips on a large cutting board, Add 1-2 tbsp Southwest Fiesta with Black Beans and Corn Dip & Spread on top of the steak. Add bell peppers on top and then roll up the steak around the mixture, and insert a toothpick to secure the rolls.
- If pan searing, heat the same large skillet over medium-high heat again, and add in olive oil.
- Carefully add your steak roll-ups into the skillet or grill seam side down and cook for about 3-4 minutes per side, until golden brown and cooked to your liking.
- Remove from heat and sprinkle with desired garnishes and serve with additional dip on the side. Serve immediately.
