This simple and flavorful appetizer takes just a few minutes to cook – sweet corn, fresh artichokes and just a touch of spicy Jalapeño will delight your guests.
Ingredients
- 1 cup self rising flour
- 1 10 oz container of Artichoke & Jalapeño Dip & Spread, plus additional for serving
- 1 cup sweet corn, fresh or frozen
- 1 egg
- Parsley to garnish
- 1 tbsp avocado oil, for frying
- Additional dip & spread for serving
Instructions
- In a medium bowl, combine flour, 10-oz container Artichoke & Jalapeño Dip & Spread, egg and corn.
- Preheat cast-iron with avocado oil over medium heat.
- Using a large cookie scoop, scoop put fritter batter, place in pan and slightly flatten. Do not overcrowd the pan, will take 3-4 batches. Flip to cook other side once golden brown, about 3-4 minutes.
- Garnish with parsley.
- Serve fritters with additional Dip & Spread on the side.
