Creamy Queso Roll- Ups
Ingredients
- 4, 8- to 9-inch flour tortillas
- 1 cup Artichoke & Jalapeño Dip & Spread or La Terra Fina Sriracha Three Cheese Dip & Spread, or just about any of our spicy dips
- 12 oz. sliced turkey
- 1 avocado, peeled, pitted and sliced
- 3/4 cup Monterey Jack cheese, shredded
- 1/2 cup sliced black olives, drained
- 4 scallions, sliced
- 3 cups iceberg lettuce, shredded
- Salsa verde or green hot sauce, for serving
Instructions
- Spread 1/4 cup dip on a tortilla. Arrange 1/4 of each: turkey, avocado, cheese, olives, scallions and lettuce on top; roll up tightly.
- Repeat with remaining tortillas. Serve as is, halved or cut into bite-sized pieces, with salsa or hot sauce on the side or drizzled on top.
Chef’s Note:
To save time, look for pre-shredded lettuce at your supermarket.
This recipe would also be good with ham, roast beef or rotisserie chicken instead of turkey.
