Ingredients
For the meatballs
- 1lb ground beef
- ½ cup breadcrumbs
- 1/3 cup La Terra Fina Tzatziki with Feta Dip
- 1 egg, lightly beaten
- 1 finely chopped shallot
- 1 teaspoon fresh dill, finely chopped
- 1 teaspoon fresh parsley, finely chopped
- 2 cloves garlic, minced
- Zest from one lemon
- 1 teaspoon salt
- ½ teaspoon pepper
For the sauce
For the bowls
- Two cups rice, cooked
- 1 pint cherry tomatoes, halved
- 1 cucumber, diced
- 1 cup torn fresh herbs (parsley, dill, basil, mint, or cilantro all work great)
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl combine all meatball ingredients. Mix gently with hands until fully combined. Do not overmix.
- Form mixture into 1 ½ inch meatballs and place on prepared baking sheet. Mixture should yield about 16 meatballs.
- Bake for 20 minutes until cooked through.
- Meanwhile, whisk together sauce ingredients
- To assemble the bowls, divide rice between 4 bowls. Top with meatballs, chopped tomatoes, cucumbers and fresh herbs. Drizzle with Tzatziki Feta sauce.
