Fried Stuffing Bites With Spinach, Artichoke & Parmesan

Ingredients
- 2 cups Leftover Stuffing
- 1 cup Panko Breadcrumbs
- 10 oz. La Terra Fina Spinach, Artichoke & Parmesan Dip & Spread, divided. Can also use Artichoke & Jalapeño Dip & Spread or other favorite La Terra Fina Classic Dip & Spread
- 1/2 cup All Purpose Flour
- 2 large Eggs
- 2 tbsp. Milk
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
- 3-4 cups neutral oil, such as grapeseed or canola
Instructions
- Mix together the flour, salt, and black pepper.
- In a separate bowl, beat the eggs and milk together.
- Add the breadcrumbs to a separate bowl, as well.
- In a large bowl, stir together the stuffing and ½ cup Spinach Artichoke & Parmesan Dip & Spread until well-combined. As 1-2 tbsp. flour is batter is too wet.
- Roll 2 tablespoons per serving in a ball, then place on a pan lined with parchment paper. Repeat with remaining stuffing mix.
- Freeze the stuffing balls for 15-20 minutes, or until firm.
- In the meantime, heat up the oil in a deep fryer or large saucepan to 375F.
- Dredge each stuffing balls through the flour mixture, then the egg bowl, and finally through the breadcrumbs.
- Carefully lower 3-4 coated stuffing balls into the hot oil and fry until golden brown, about 4-6 minutes.
- Remove with a slotted spoon, then transfer to a wire rack lined with paper towels. Enjoy warm and dipped in the remaining Spinach Artichoke & Parmesan Dip & Spread!
