Steak & Sriracha Soft Tacos

Ingredients

1¼ to 1½ pounds boneless sirloin steak or flank steak, about 3/4-inch thick
Salt and pepper
12, 6 to 8 inch corn or flour tortillas
1½ cups Sriracha Three Cheese Dip & Spread
½ small onion, halved and thinly sliced
1½ cups diced tomato
1½ cups small cilantro sprigs
Sriracha, or other hot sauce, for serving

Instructions

Preheat grill to high heat with lightly oiled grate. Sprinkle steak with salt and pepper, grill to desired doneness, about 4 minutes per side for medium-rare. Remove steak from grill, let rest 5 minutes.

Meanwhile, wrap tortillas in foil, place on a cooler part of grill and cook until warm, 5-8 minutes, turning halfway through.

Slice steak thinly across grain. Divide dip among tortillas, top with steak, onion, tomato and cilantro. Serve with Sriracha along side.

Chef’s Notes: To change things up, try these easy tacos with chicken, shrimp, pork or fish. Or use your favorite salsa instead of the tomatoes.
