Heat a large skillet or griddle pan over medium heat. Once hot, add the ground breakfast sausage and break it with a spatula as you cook. Cook until the sausage is browned and cooked through, about 6 minutes. Remove the sausage from the pan and set aside.
In a medium bowl, whisk the eggs and milk until well beaten. Heat the large skillet over medium heat and grease skillet with butter or coconut oil. Pour eggs into skillet and scramble the eggs. If the eggs cook too quickly, turn the temperature down slightly.
In another large skillet over medium-low heat, place a tortilla on the bottom of the pan to warm. Sprinkle 1/5 of the cheese over the tortilla and heat until cheese is fully melted, being careful not to burn the tortilla.
Remove the warm tortilla from the pan and place on a work surface. Spread one tablespoon of the dip on the cheese. Top with 1/5 of the spinach, 1/5 of the breakfast sausage and 1/5 of the egg mixture. Basically, you want to divide ingredients evenly between 5 tortillas. Fold the bottom edge of the wrap up. Fold the sides inward and then roll up the wrap tightly to enclose all of the fillings. Repeat for remaining tortillas.
