Chipotle Ranch Smothered Pork Chops

Ingredients

  • 4 bone-in pork chops (about 1-inch thick)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small yellow onion, thinly sliced 
  • 1 cup sliced cremini mushrooms
  • ½ cup low-sodium chicken broth
  • 1 (10 oz) container of La Terra Fina Chipotle Ranch Dip & Spread
  • 1–2 tablespoons lime juice, to taste
  • Chopped parsley or cilantro, for garnish

Instructions

  1. Pat the pork chops dry and season both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3–4 minutes per side, until nicely browned. Transfer to a plate; they will finish cooking in the sauce.
  2. Add the butter and reduce heat to medium. Add onion and mushrooms to the skillet and cook for 4–5 minutes, stirring, until softened and lightly browned. Pour in the chicken broth and stir, scraping up any browned bits from the bottom of the pan. 
  3. Reduce heat to low and whisk in the entire 10 oz container of La Terra Fina Chipotle Ranch Dip & Spread until smooth and creamy. Add 1 tablespoon lime juice, then taste and adjust with more lime or salt & pepper as needed.
  4. Return the pork chops and any juices to the skillet, nestling them into the sauce. Spoon some sauce over the tops of the chops. Simmer on low heat for 8–12 minutes, until the pork is cooked through (about 145°F internally) and the sauce has slightly thickened.
  5. Serve the pork chops over mashed potatoes or alongside green beans. Spoon extra sauce over the top and garnish with chopped parsley or cilantro.
