4, 8- to 9-inch flour tortillas
1 cup Chili Con Queso Dip or just about any of our spicy dips
12 oz. sliced turkey
1 avocado, peeled, pitted and sliced
3/4 cup Monterey Jack cheese, shredded
1/2 cup sliced black olives, drained
4 scallions, sliced
3 cups iceberg lettuce, shredded
Salsa verde or green hot sauce, for serving
Spread 1/4 cup dip on a tortilla. Arrange 1/4 of each: turkey, avocado, cheese, olives, scallions and lettuce on top; roll up tightly.
Repeat with remaining tortillas. Serve as is, halved or cut into bite-sized pieces, with salsa or hot sauce on the side or drizzled on top.
To save time, look for pre-shredded lettuce at your supermarket.
This recipe would also be good with ham, roast beef or rotisserie chicken instead of turkey.
