These Jalapeño Ranch Potato Pancakes are crispy little potato fritters topped with bacon and Jalapeño Ranch Dip & Spread - crave-able and easy to prepare. Your guests will love them!

Ingredients

  • 2 pounds russet potatoes, peeled
  • ½ small sweet onion
  • 1 (10-ounce) container La Terra Fina Jalapeno Ranch Dip and Spread
  • 1 medium egg
  • 2 tablespoons cornstarch
  • ½ teaspoon kosher salt
  • ⅜ teaspoon baking powder
  • 4 slices thick bacon
  • ½ cup shredded cheddar cheese
  • Fresh chives, garnish

Instructions

  1. Using a box grater with the large hole size, grate the potatoes and onion. Transfer to a metal strainer set over a large bowl, toss the potatoes with the onion and squeeze dry. Let the potatoes and onion drain for 2 to 3 minutes, then pour off the liquid in the bowl, leaving the starchy paste at the bottom. Add the potatoes and onion to the bowl, along with half of the dip, egg, cornstarch, salt and baking powder; mix well.
  2. In a large nonstick skillet, heat a heaping tablespoon of butter over medium to medium-high heat. Once hot, spoon three 1/4-cup mounds of the pancake batter into the skillet about 2 inches apart and flatten slightly with a spatula. Fry the pancakes, turning once, until golden brown and crispy, 5 to 7 minutes. Transfer the potato pancakes to a paper towel lined plate to drain. Repeat to make the remaining pancakes, adding more butter to the skillet as needed.
  3. Wipe the skillet clean and add the bacon slices. Cook over medium heat for two to three minutes and then flip and cook for an additional three minutes or until crispy. Drain on a paper towel lined plate.  Chop the bacon into slices.
  4. Preheat an oven to broil on low.
  5. Transfer the potato pancakes to a baking sheet.  Top each pancake with some shredded cheese. Cook in the oven until the cheese melts.
  6. To serve, top with a dollop of the Jalapeno Ranch Dip and crispy bacon. Garnish with some fresh chives.
