Fresh, flavorful, and fast, this meatball and rice bowl will instantly transport you to the Mediterranean.


For the meatballs

  • 1lb ground beef
  • ½ cup breadcrumbs
  • 1/3 cup La Terra Fina Tzatziki with Feta Dip
  • 1 egg, lightly beaten
  • 1 finely chopped shallot
  • 1 teaspoon fresh dill, finely chopped
  • 1 teaspoon fresh parsley, finely chopped
  • 2 cloves garlic, minced
  • Zest from one lemon
  • 1 teaspoon salt
  • ½ teaspoon pepper

For the sauce

For the bowls

  • Two cups rice, cooked
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup torn fresh herbs (parsley, dill, basil, mint, or cilantro all work great)


  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl combine all meatball ingredients. Mix gently with hands until fully combined. Do not overmix.
  3. Form mixture into 1 ½ inch meatballs and place on prepared baking sheet. Mixture should yield about 16 meatballs.
  4. Bake for 20 minutes until cooked through.
  5. Meanwhile, whisk together sauce ingredients
  6. To assemble the bowls, divide rice between 4 bowls. Top with meatballs, chopped tomatoes, cucumbers and fresh herbs. Drizzle with Tzatziki Feta sauce.
