Ingredients

  • 1 pre-made graham cracker pie crust
  • 1-10oz package La Terra Fina Pumpkin Cheesecake Dip
  • 1 cup pumpkin puree
  • ¼ cup brown sugar
  • 2 teaspoons vanilla extract, divided
  • 2 cups heavy whipping cream
  • 1/3 cup granulated sugar
  • ¼ teaspoon cream of tartar
  • 1 teaspoon pumpkin pie spice

Instructions

  1. In the bowl of a stand mixer, combine La Terra Fina pumpkin cheesecake dip, pumpkin puree, brown sugar, 1 teaspoon vanilla extract and pumpkin pie spice. Mix for 2-3 minutes until thoroughly combined.
  2. In another bowl, whip heavy cream on high speed until foamy, add granulated sugar, 1 teaspoon vanilla extract and cream of tartar. Continue whipping until stiff peaks form.
  3. By hand, gently fold 2 cups of whipped cream into pumpkin mixture until fully combined. Spread mixture into pie crust.
  4. Cover with plastic wrap and chill in the fridge for at least 6 hours until fully set. Slice and garnish with remaining whipped cream and pumpkin pie spice, if desired.
